Shamrock Pizza: Just in Time for St. Patrick’s Day!
(Shamrock Pizza Recipe found on Skinny Mom)
We’ve had a short break from those winter “eating” holidays but with springtime comes the return of those food-centric celebrations starting with St. Patrick’s Day. It can be hard to resist the temptation to splurge a bit—we get caught up in the festivities and the rest is history, but it doesn’t have to be!
I love adding some color and fun to my food, and what better way to feel the luck of the Irish, than with a healthy twist on this family-friendly St. Patrick’s Day pizza? (I’m in love with the shamrock shaped spinach toppings!)
Finding a healthy alternative to some not-so-healthy foods is something that takes some time to learn, but minimal effort to implement. As a certified Health Coach through the Institute for Integrative Nutrition (IIN), I learned to cultivate positive health choices in myself and my clients through manageable lifestyle and behavior adjustments (such as trading in that greasy, veggie pizza from the pizzeria down the street, for a whole wheat, naturally delicious one).

Shamrock Pizza Recipe
Total time: 35-40 minutes | Serves: 8 |Preheat Oven: 375 degrees
- White Garlic Pizza Sauce:
- 1 Tbsp extra virgin olive oil
- 1 Tbsp minced garlic
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp red pepper flakes (optional)
- 2 Tbsp flour
- 1 cup reduced-fat 1% milk
- ½ cup reduced-fat mozzarella cheese
- ¼ cup Parmesan Reggiano cheese, freshly shredded
- handful fresh spinach leaves
- 1 whole wheat pizza crust (I like Boboli® brand)
The Sauce: In a medium sauce pan, heat extra virgin olive oil, garlic, salt, pepper, and red pepper flakes for about 30 seconds, then add flour and cook for 1-2 minutes, stirring constantly. Do not let the flour mixture brown or color. Add milk into flour mixture a little at a time, whisking constantly to avoid lumps. Bring mixture to a simmer, stirring frequently, until mixture has thickened into a creamy sauce.
The Pizza: Pour ⅓ cup of sauce or as much as you desire onto pizza crust. Top pizza with reduced fat mozzarella cheese and Parmesan Reggiano cheese. Next, take a few pieces (6-10 leaves) of spinach and cut (using scissors) each piece into the shape of a shamrock. Or form a shamrock out of 3 spinach leaves. Top pizza with cut spinach leaves. Bake pizza according to crust package directions or for 15-20 minutes until cheese is bubbly and melted.
Finally, cut pizza into slices and serve immediately!
