Healthy Cooking Camp & What I EAT
A few weeks ago, I had the pleasure of being interviewed by Robyn Youkilis and Quinn Asteak of Healthy Cooking Camp for their new video series, “What do you eat?”. They asked me what a typical day looks like for breakfast, lunch, dinner and snacks. I gave them some options and they chose ones they wanted to highlight. They love how much of a comfort food gal I am! It’s so fun to experiment with healthier takes on my favorite comfort meals.
Check out my simple recipe for Healthy Deviled Eggs (what we nicknamed Angel’s Eggs instead) and my entire interview to get an idea of what I love to eat. You will also see how I make a healthy cinnamon toast danish. I will have to make sure to share my mom’s tater tot casserole recipe with you all too. I make her signature dish super healthy and it’s perfect when the weather starts to get cooler.
I love to cook. I find it is so meditative; and it gives me control over what I am putting in to my meals and my mouth. Even on a busy night after teaching all day long, it still feels good to fire up the stove and chop up some veggies and make something nourishing for myself or my husband and I. It also allows me to appreciate going out to dinner more as a special occasion.
